About Qi Men Hong Cha
Keemun, Qi Men Red Tea, from a former county of Keemun in Anhui Province, was once the popular "English Breakfast Tea". It is the best known of the north China Congous. There are various grades of Keemun such as Mao Feng, Hao-Ya, and Ji Hong. Keemun contains a substance called myrcenal. Tips : When you brew Chinese white tea in a gaiwan, always leave a little bit of tea in the gaiwan between each infusion. This is call “the root” and will allow you to get the best of the green tea.
Brewing Instructions: Loose-leaf teas are best brewed using a teapot and strainer or stainless steel mesh tea ball. If using a tea ball allow room for tea leaf expansion by using one at least 2 inches in diameter for one 8 oz. cup. Use 2 tsp. of tea to brew one 8 oz. cup. Bring water to boil, remove from heat for 2-3 minutes. Water should be at 165-175 degrees. Brewing white teas at temperatures slightly less than boiling brings out the subtleties and sweetness. Brew for 2-3 minutes. This tea can be used for 3-4 infusions. Our teas have a natural sweetness and do not usually require sweeteners.

6. Bi Luo Chun tea
