Onnie's Attic suggests quick Chilaquiles for a Cinco de Mayo Feast!
Who doesn't love an excuse for Mexican food and a margarita! Too bad that Cinco de Mayo falls on a Monday just as you're getting back into the swing of the week. But, no worries, here's a quick Chilaquiles recipe made easy with a rotisserie chicken shortcut.
Shopping list - Rotisserie chicken
28 oz can peeled tomatoes,
2 cans of chipotle chilies in adobo
Queso fresco, feta or similar
Chop several cloves of garlic and saute in oil over medium heat just until fragrant. Add the tomatoes and their juices, the chipotles finely chopped, one tablespoon of the adobo sauce and a cup of water. Bring to a boil and simmer until thickened.
While the sauce is thickening, shred the chicken and place tortilla chips in shallow soup bowls. Once the sauce has thickened, add the shredded chicken and stir until all the ingredients are hot. Add chopped fresh cilantro and mix, pour the mixture over the tortilla chips. Garnish with chess and sour cream or place them on the table for self service.
Almost forgot, raise a margarita in toast and enjoy!
