10,000 to 50,000 Scoville. Chipotle chilies are dried and smoked jalapeno peppers. The jalapenos are dried and smoked, turning them into the delicious Chipotle chile. These morita chilies have a unique, medium hot, smoky flavor which is popular in many southwestern dishes. Also great for making sauces. Adds a unique flavor and smokiness. Where there's smoke, there's fire.
1,000-1500 Scoville. Pure ancho chile powder is ground from dried poblano chili peppers. These are mild and sought after for their rich, fruity flavor.For what they lack in heat they make up in flavor. A classic ingredient in traditional Mexican moles.
10,000-20,000 Scoville. Serrano chilies are savory rather than fruity and have a medium heat level. Our serrano chiles have been smoked and have a flavor similar to chili powder with a smoky element similar to chipotle. An extremely flavor packed pepper. We use a fully ripened red serrano that is then smoked to provide excellent flavor. And it has some heat.
30,000-50,000 Scoville. Fruity, but with a little amount of heat. Pure aji amarillo chile powder is light-orange. This variety is Aji Amarillo, spanish for yellow. Good flavor, but not much heat.
