Candy melts are sold and shipped only during periods of cooler weather as they melt easily during shipping. This doesn't usually affect the final results- but most people don't want to get bags of melted chocolate products!
Fast-melting confectionery coating wafers (candy melts) are the key to easy candy making. Smooth texture and great taste make Candy Melts® your most convenient option for molding. There is no tempereing needed so candy making is so much easier.
Wilton candy melts come in a great assortement of colors that you can mix together to create special colors. Or, start with white and add candy colors (not food colors as these won't mix with chocolate!)
To Melt
Double boiler method: Fill lower pan with water to below level of top pan. Bring water to simmer; then remove from heat. Put Candy Melts® in top pan and set in position on lower pan. Stir constantly, without beating, until smooth and completely melted.
Microwave method: In microwave-safe container, microwave 1 package of Candy Melts® at half power or defrost setting for 1 minute. Stir thoroughly. Continue to microwave and stir at 30 second intervals until smooth and completely melted. Candy Melts® may also be melted in a disposable decorating bag. melt as described above, squeezing bag between heating intervals to blend Candy Melts® together. When completely melted, nip off end of bag and squeeze melted Candy Melts® into molds. Throw away bag when empty.

Note: Confectionery coating will lose its pouring and dipping consistency if overheated, or if water or other liquid is added. If coating is overheated, add 2 teaspoons hydrogenated vegetable shortening per 14-ounces of Candy Melts®.
To Color
Turn White Candy Melts® into virtually any color using oil-based candy colors – a great way to change shades or to achieve cool custom colors.
Add to melted Candy Melts® a little at a time. Mix thoroughly before adding more color. Colors tend to deepen as they're mixed. Pastel colored candies are most appetizing, so keep this in mind when tinting.
To Flavor
The creamy, rich taste of Candy Melts® can be enhanced by adding an oil-based Candy Flavor.
Add approximately ¼ teaspoon Wilton® oil-based Candy Flavor to 14-ounces (one package) of melted Candy Melts®. Many of the Lorann flavorings also mix with chocolate well- see our listing in the EBay store for exceptions. Never use alcohol based flavorings; they will cause coatings to harden.
To Mold (1 color candies)
Pour melted candy into clean dry mold; tap lightly to remove air bubbles. Place mold on level surface. Refrigerate until bottom of mold appears frosty or until candy is firm. Pop out candy. For lollipops, fill molds, tap to remove air bubbles, position sticks in mold. Rotate sticks to thoroughly cover with candy so they remain securely in place. Refrigerate to set, pop out lollipops.
Clean-Up
After you finish making candy, wash your candy molds in warm water and dry thoroughly with a soft cloth. Don't use soap or detergent – they can eventually cause molds to dry out and crack. Never boil your molds or place them in the dishwasher. Molds can last for years if you store them the right way…keep them flat to prevent warping and place tissues between stacked molds to prevent scratches.
Storage
Making candy for a special occasion or holiday? Save time by making it in advance. Molded candy will stay fresh for 2 to 3 weeks. To store safely, pack candy in airtight containers and keep at room temperature. It is not necessary to refrigerate or freeze your molded candy.
